Toes in the Dyle
“Les Pieds dans la Dyle” is the persistent dream of producing wine “without Gibolin” on our native lands, which has finally taken shape in reality. In the vineyard, we only work with interspecific grape varieties that naturally resist the main diseases affecting vines. We believe that a vineyard, like an orchard, should be able to function on its own. We focus on creating (or maintaining) the conditions necessary for this to be possible.
In the cellar, we strive to produce wines without any additives and with no other ambition than for them to be enjoyed (which is already quite an achievement). We aim for wines that are simple, approachable, and cheerful...
We like to say that peasant viticulture, without any additives either in the cellar or in the vineyard, and with a very low environmental impact, is possible;
to explain that the artisanal wines resulting from this craft have character and reflect the work, climate, and personality of the person who makes them;
to say that "Terroir" is neither good, nor beautiful, nor bad, but simply the reality of a producer in their cultivation area, with its climate, constraints, and production methods; that terroir is drawing the target around the arrow after it has been shot.
And finally, to suggest that making wine also requires a bit of magic, bluff, and imposture...
