Toes in the Dyle<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

\u201cLes Pieds dans la Dyle\u201d is the persistent dream of producing wine \u201cwithout Gibolin\u201d on our native lands, which has finally taken shape in reality. In the vineyard, we only work with interspecific grape varieties that naturally resist the main diseases affecting vines. We believe that a vineyard, like an orchard, should be able to function on its own. We focus on creating (or maintaining) the conditions necessary for this to be possible.<\/p>

In the cellar, we strive to produce wines without any additives and with no other ambition than for them to be enjoyed (which is already quite an achievement). We aim for wines that are simple, approachable, and cheerful...<\/p>

We like to say that peasant viticulture, without any additives either in the cellar or in the vineyard, and with a very low environmental impact, is possible;
to explain that the artisanal wines resulting from this craft have character and reflect the work, climate, and personality of the person who makes them;
to say that \"Terroir\" is neither good, nor beautiful, nor bad, but simply the reality of a producer in their cultivation area, with its climate, constraints, and production methods; that terroir is drawing the target around the arrow after it has been shot.
And finally, to suggest that making wine also requires a bit of magic, bluff, and imposture...<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

Les pieds dans la Dyle \u00ab\u00a0Les Pieds dans la Dyle\u00a0\u00bb, c’est le r\u00eave obstin\u00e9 de produire du vin \u00ab\u00a0sans Gibolin\u00a0\u00bb sur nos terres d’origine, qui a fini par prendre forme dans la r\u00e9alit\u00e9. A la vigne nous ne travaillons que des c\u00e9pages intersp\u00e9cifiques, r\u00e9sistant naturellement aux principales maladies de la vigne. Nous nous disons qu’une vigne, \u00e0 l’instar d’un verger, doit pouvoir fonctionner toute seule. Nous nous contentons de mettre en place (ou de maintenir) les conditions pour que ce soit possible. A la cave nous tentons de produire, sans aucun intrant et sans autre pr\u00e9tention qu’ils soient bus (ce qui est d\u00e9j\u00e0 pas mal), des vins simples, friands et joyeux… On aime bien raconter qu’une viticulture paysanne, sans intrant, ni \u00e0 la cave, ni \u00e0 la vigne, avec un tr\u00e8s faible impact environnemental est possible ; Expliquer que les vins artisanaux qui r\u00e9sultent de ce travail artisanal ont du caract\u00e8re et refl\u00e8tent le travail, le climat et la personnalit\u00e9 de la personne qui les font; Dire que le \u00ab\u00a0Terroir\u00a0\u00bb n’est ni bon, ni beau, ni mauvais, mais juste la r\u00e9alit\u00e9 d’un producteur sur son lieu de culture, avec son climat, ses contraintes et ses m\u00e9thodes de production, que le terroir c’est dessiner la cible autour de la fl\u00e8che apr\u00e8s avoir tir\u00e9 la fl\u00e8che: Et enfin sugg\u00e9rer que pour faire du vin, il faut aussi un peu de magie, de bluff et d’imposture… Envie d’en savoir plus ?
